That was yesterday...
I got my corned beef ...
It was awesome @ NICK 1014 CAFE ON BRIDGE ST .
NEW CUMBERLAND , PA..
TWO 1" THICK BY 4.5" -5 " DIAMETER WITH HOMeMADE
Gravy, 4 small boiled spuds with skin, 2 massive
Steamed carrots, 1/4 wedge of boiled cabbage, all cooked separately..
I had to ask for butter and spicy Goldens mustard..
$17.99...best corned beef I've has since that Irish bar in state college got sold/ flattened and demolished for a new 10-12 story apartment bldg...

I met several Irish and Jewish members up in Cleveland during my 5-6 yrs in Ohh-H-TEN...I missed all that Danny Greene and Dennis kucinnich crap by 5+ yrs...but I met a few of the players and associates...at corky and Lenny's deli in shaker heights and several at a MOD African American clothing shop right above "the flats" ..."doorway to style" was one of the biggest DEMOCRATIC NATIONAL COMMITTEE bag drop spots in the entire city of cleveland...it also had SPOOK TIES TO THE COMPANY

I never saw it before on corned beef ...EVVVAAAHHH!!

BUT IT WAS GOOD!

I LEARNED cooking from my Irish mother...she would make HAM STEAKS ( FRIED IN A STAINLESS STEEL PAN) AND DRAIN THE FAT , THEN ADD 1/3 WATER AND 2/3 MILK OVER THE BROWNED HAM STICKINGS IN THE PAN..THEN ADD SOME CORNSTARCH in cold water and make an awesome tan gravy...it was just like that...
She would make "smoked ham butt" with cabbage, butter the hell outta the boiled spuds and add fresh parsley...then butter the cabbage...my dad would smather the ham and cabbage with guldens brown mustard on top of that rich melted butter...it was awesome...

I'm a corned beef aficionado. First I heard of gravy with it. I'm slowing down as I age and only made 3 corned beef dinners so far this year. I expect there will be at least 3 more soon.
