Morning youse guys. Cloudy 60 going to 75. And EVERY friggin' day is leg day.

Managed to finish the taxes yesterday. Came out pretty even as we owe state and get a refund from the feds.

Puppy dog walked and fed. Made myself a chocolate protein shake with creatine and threw in a honeycrisp apple for good measure. Vitamix ate that thing up!

Off to the gym. Lets see how the shoulder holds up.

Did the gym, showered, ate... took the puppy dog to his appointment for a bath and brush... he was mad at me.

Cried when I left... he always does that. Poor guy. He got abandoned and was on da streets when animal control found him and took him to da shelter. I met him his first day in da joint... and we bonded. 5 days later he went home with me and he's a velcro dog now. Stuck to me.

I can still taste the fried bologna sandwiches with mayo my Mom made when there were 6 of us kids growing...had them often cuz they were quick and easy...haven't had bologna in more than 60 years...maybe I'll see if the deli section at the grocers have Farmer Johns bologna...

I want to run to Costco and pick up a brisket.

I also want to not drive anywhere.

Supposedly Costco isn't as busy after dark.

It's also located in an area you shouldn't visit after dark.

Can't decide what I actually want to do.

Lolz. Where you at?

I ended up going to the Garyville Costco. NOBODY was there. From the time I exited my truck until I was back in it was 6 minutes.

They had prime briskets.

I got a 20 pounder. Gonna do no trim on this one. Haven't tried that yet. May need to round off the flat a bit to fit it in the smoker.

Printed out this guy. It turned out pretty well. I wanted to challenge it to see what it could do and the printer can print some nice detail.

Hey Danm... I barely trim my briskets. Sometimes not at all. It's easy as pie to get the fat off once it is cooked, and leaving it on makes that thing juicy.

Some may say it's harder for the rub to penetrate, and that's probably so... but it's still damn good.

Happy Tuesday fellas.

Went out to light the smoker and realized I only have half a small bag of charcoal. Gotta run to menards. And the post office. Picked up my held mail and they said "your carrier has the packages and will deliver today" no packages delivered, tracking shows "held at post office"

Had to trim a couple jnches off the end of the flat to fit it in my smoker.

I really wanna find some old propane or air compressor tanks and build me an offset. But every time I find em people want waaay too much money and the cheap ones are snagged before I can get to em.

Severe thunderstorms and possible tornados tonight. That'll happen with a 70° day in February.

Hopefully the brisket is safe n sound before then. My Ez-Up I normally deploy when the rain interrupts the smoker got bent to hell in the last storm and all the canopy attachment points tore so I don't have that option. It'll probably be warm enough that I can just let it finish in the indoor electric smoker. The smoking part is done now I'm just cooking. Can't use the oven in the house, did that once and the smell hung out for weeks.

2 pork chop sammiches for lunch. Slice of onion, some mayo, and a slice of gouda.

Mosquitos are out en masse today. Hope it freezes again soon maybe it'll kill off some before they can lay more eggs.

Trimmed down 3 stumps w/chainsaw and then drilled holes and put a stump remover chemical in NINE stumps total. Took about an hour. I'll try to dig them up this time next year.

Dave is supposed to come up Sunday and fell 3 trees for me. He lives a few miles away. He worked for a logging company for yrs and his job was to fell trees. Shouldn't take him more than 20 or 30 min. I don't drink, but I'll be sure to pay him with beer and a good meal.

I know my limitations and these trees have to fall a certain way or they'll end up in the county route. It would be so embarrassing, and dangerous, to be out there in the middle of the road bucking logs while people were waiting to get through. Lol!

After that I'll move to creek side and it doesn't matter where they fall. That's not to say I wont make notches and try to get them to fall where I want. It's good practice and I'm getting better...

As long as the weather/wind holds there might not be a need to cut anything next winter.

I'm only cutting trees that are crowding bigger, well established trees. Sometimes that's hard to do, bc a lot of the small tree tops get tangled in some of the lower limbs of the taller, bigger trees...that's why a few of the trees I downed a couple weeks back were so sketchy. I lived.

Was trying to do a no wrap no trim never open the lid brisket. Had to trim to fit it in the WSM strike 1. Big storms inbound around 1900 so I opened it and wrapped it. Strike 2 and 3. I can do the experiment next time. Tonight I just want the brisket to be done and safely resting before the storm. It's still too big to fit in my electric smoker laying flat, it would have to be propped up against the wall. Not the end of the world I'm sure but I'd rather keep it the way all my briskets have been kept. All the juice sitting on one end and likely spilling out the wrap doesn't seem ideal.

Yes it is.

And I can't wait till it goes on sale, I always load up on a ton of them and make pastrami. Gotta soak em in water and exchange the water a few times to strip the salt out, then smoke em and you got pastrami.
