Upgraded our tornado risk to a 3/5 and chances of baseball sized hail.

I'm still outside with the smoker, it's not even windy yet. The local weather nerd posts on facebook he says it'll be scattered supercell storms and should be predominantly north of me.

Brisket is reading 198 but still has a little resistance to the probe. It's close. Been on for 9hr 45 min. I'll check it again in a half hour when I tell the boy goodnight.

So far no storm at home. Slightly windy and temp dropped by 10 and everything's wet with dew but no rain or anything crazy yet. Tornado watch in place until 11p.

Time to bring the brisket in. Wife's going to bed now so if I'm gonna make noise vacuum sealing the portions I gotta do it now so I don't wake her later.

Ho leee chit

Prime brisket is so much better. I was impressed by the choice over select. But I think I've only had choice even tho I thought I'd done prime or I just screwed up the prime. As much improvement as choice was over select, prime is over choice. Or I just got a ridiculously good one.

This is so damn good. I did overcook it a bit, the slices fall apart. But the flavor is fantastic.

I have found over the years that either choice or prime are the ticket for beef. However... since the brisket is cooked low and slow, even the shitty cuts can be good.

I've done prime that came out amazing, and some that was just okay. I really think it all comes down to the way it is cooked. If you can hold that temp and be patient while it goes through the stall... money.

My freaking Back has been hurting since Tues. Morning...this damp ass rain weather ain't helping any either...
Found decent stuff on trash day today and cool stuff at the metal recycling yard... I usually make more $$$ selling the stuff I buy for .35 a pound at the yard than I do bringing in metal...

Back from St. Augustine

Ten minutes in the sun, second degree burns.

Say the Spanish fort. Walked the tourist trap. Ended up having my first Shimp Po Boy at the Sunset Grille.

As every Northwoods Ever should go, had my first ever Popeyes experience- in the Hotlanta airport. Mmm, Transfats.

My first experience with a Trans-Chicken.

Got a 2hr nap in. Woke up from a very vivid dream where wife and I walked into a room to find the little mermaid, Kermit the frog, and Ursula having a gangbang in a canoe... wtf

So I wasn't getting back to sleep. Made some brisket grilled cheeses with wagyu beef tallow instead of butter on the bread. Also made a pan of dirty rice with finely chopped brisket instead of ground beefs. Gonna eat well tonight.

First of 4 final night shifts. There were some unpleasant policy/procedure changes went into effect last weds. That was partly why I wanted out and why I requested a start date at new job to be right after vacation, I didn't want to deal with it for 4 days especially since it doesn't translate to new job.

Today was the final day of work at my ex-job... new job starts Monday... can't clear my mind of stuff that has to be done at the old job yet.. maybe I need more beers..Beer

Wifey has semi-constantly reminded me to get rid of my junk (…I prefer to call it “stuff”…) so started looking into selling off my vinyl records. Found a small local store that may pay w-a-y more than a place I used to sell my albums so started to pull some yesterday. For s&g, checked out eBay to see what some of them were selling for and kinda blown away at how much some of the ones I have, are worth. May have to re-think the wholesale purging and sell the more rare ones.

I've got a buncha vinyl albums that I've hung onto since I started collecting them in the early 60's...I even bought a spiffy Project turntable about 7 years ago, with the intention of playing them every now and then... it's been more then than now...may've used that turntable less than a dozen times...forgot how heavy a milk crate full of albums weighs...not a huge collection...only 3 milk crates full...

problem is that the sound system is in the man cave and the album collection is in the office... the hot summer months and the environment in the man cave then aren't conducive to keeping albums in playable condition...office has better, more consistent temp and RH

I’ve been debating whether or not to get another turntable but I don’t listen to my stereo system more than twice a month so the non-usage argument (…in my mind…) wins everytime. BUT, iffin’ I do, pretty much settled on a Dual CS 329. Did consider a Project TT but the lazy guy in me decided I want a semi or fully automatic ‘cause I don’t wanna hafta get up and lift the tonearm everytime a record finishes.

Suggest you just take a couple albums at a time and play them. Then when the vinyl “bug” hits, you’ll wanna listen to more so then you’ll take more to the MC. Eventually a crate or two will be lighter and much easier to carry.

To add to my earlier post, leaning towards jumping back into selling on eBay. I’mma now researching record mailers as well as inner sleeve replacements as some of the sleeves have either discolored (paper) or disintegrated (PE). Probably get a 100 “audiophile” non-static rice paper sleeves for those albums.

I could never get rid of all mine. To much money invested.
And I will never part with my bulletproof pair of '05 Technics 1200's.

After my Dual CS 701 died in the early 2000’s, I called someone I knew at Panasonic and inquired about the SL1200. Got the price, iirc, around $300, mebbe $350, but never pulled the trigger. Of course hindsight is 20/20 so that was a mistake on my part. d'oh!

As far as number of albums, I guesstimate I have only 750 to 1,000 left from a high of around 3 to 4,000. Because I worked in the retail record biz for about 10 years, I accumulated a lot of records and the vast majority for free. When I was at Sony and we introduced CDs in ‘83, I “saw the light” (pun intended) and over time, switched my vinyl for CDs.

I sold my collection of about 200 albums when MP3 was the big thing. Vinyl was a dinosaur so I sold them at a yard sale for about 50 cents each. Now that vinyl is a "new" thing they are like $30 used for average stuff. We have a used record store in town that opened up maybe a year ago. He has a huge selection, literally 1,000's of 33 RPM and 45 RPM stuff from all different music tastes.

On another note, I ran into the neighbor kid the other day. He's probably 17 yrs old. Just shooting the $hit and he said he was saving up for a computer to record some songs and mix some music (he plays guitar). Hmmm... I happen to have a few unused computers that are collecting dust. How about I purge one and do a fresh install of Win 11 and put on some apps that you can use? Computer, monitor, keyboard, mouse and stuff and it's all yours.

Talked to him today to tell him his computer is all set and ready to go. Also learned that he's working on another neighbor's car down the block. He likes working on cars and pretty knowledgeable in that realm. Apparently the neighbor down the block bought a '68 Ford Mustang and they are paying him to do some work on it. 17 or 18 yr old kid helping to rebuild a 1968 Mustang... that's pretty cool. Proud of the kid.

Puppy dog walk and likely a recovery day from all the excitement so far. Might be a nice day to chill in the "Whiskey and Cigar Bar" with a Friday libation and a cigar.
